  • 1 Cup Arborio rice
  • 2 tbsp olive oil
  • 1 small onion (finely chopped)
  • 3 Cloves garlic (minced)

  • 1/2 Cups dry white wine
  • 4 Cups vegetable broth (warmed)
  • 1/2 Cups grated Parmesan cheese
  • 2 tbsp truffle oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
Instructions
  1. Preparation
    1. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, sauté until translucent.
    2. Add mushrooms and cook until they release their moisture and become tender, about 5-7 minutes.
    3. Stir in Arborio rice, ensuring each grain is coated with oil. Cook for 1-2 minutes until the edges of the rice grains are translucent.
    4. Pour in white wine and cook, stirring constantly, until it is fully absorbed.
    5. Begin adding vegetable broth one ladle at a time, stirring frequently. Allow each addition to be absorbed before adding the next. Continue this process until the rice is creamy and al dente, about 20-25 minutes.
    6. Stir in Parmesan cheese and truffle oil. Season with salt and pepper to taste. Remove from heat and let the risotto sit for 5 minutes before serving.
    7. Garnish with fresh parsley and serve immediately.
