Ingredients

Instructions

  1. Marinate the Chicken
    • In a bowl, mix yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, coriander powder, and cumin powder. Add the chicken pieces and coat them well. Marinate for at least 2 hours or overnight for best results.
  1. Prepare the Rice
    • Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
  1. Cook the Chicken
    • Heat ghee in a heavy-bottomed pot. Add bay leaves, cloves, cinnamon sticks, cardamom pods, and star anise. Fry until fragrant. Add sliced onions and green chilies, and sauté until the onions turn golden brown. Add chopped tomatoes and cook until soft. Add the marinated chicken and cook on medium heat until the chicken is tender and the ghee starts to separate from the masala.

  1. Cook the Rice
    • In a separate pot, bring 2 cups of water to a boil. Add the soaked and drained rice along with salt. Cook until the rice is 70% done. Drain any excess water and set aside.
  1. Layer the Biryani
    • In the pot with the cooked chicken, layer the rice evenly on top. Sprinkle chopped coriander and mint leaves, lemon juice, and saffron milk over the rice. Cover the pot with a tight-fitting lid.
  1. Dum Cooking
    • Place the pot on low heat for 20-25 minutes to allow the flavors to meld together. You can place a heavy tawa (griddle) under the pot to ensure even cooking and prevent burning.
  1. Serve
    • Let the biryani rest for 10 minutes before serving. Gently fluff the rice with a fork and serve hot with raita and salad.
